Estate Meats
The Venison, Pork and Lamb in the Housekeeper’s Store is all reared on the Tatton estate:
Tatton Venison
Tatton’s 500 strong herd of Red and Fallow deer roam freely in the Deer Park, breeding naturally and enjoying a relatively stress-free existence. They feed on Tatton’s grass in the summer and are fed carrots, grassnuts and hay in the winter. To keep the herds stable and healthy their numbers are closely monitored.
Each winter animals are selected to maintain the herd and the others are humanely culled, then processed into venison which is sold in the Housekeeper’s Store. Tatton’s deer policy ensures a healthy herd and enables tender, tasty venison to be produced without the need for hanging the carcass. Tatton’s Prime Venison is high in protein and low in fat.
Tatton Pork
Tatton Pork is supplied from Tatton Dale, the home farm of Tatton Park in Cheshire. The Tatton herd is made up primarily of breeds kept at the Farm in the 1930s. These are now classed as rare breeds, such as Gloucester Old Spot, Tamworth and Saddleback.
When young, the pigs are allowed to run out with their mother. After that, they are kept in spacious pens, bedded in straw with natural daylight and are fed a cereal-based diet. Our pigs are reared with a great deal of care and affection all their lives, in a happy, clean and friendly environment.
Tatton's pork has been carefully prepared by hand by a local family firm to ensure that you enjoy the beautiful full flavoured taste of real pork.
Tatton Rare Breed Lamb
Tatton’s small herds of hebridean sheep are part of the history of the Tatton Estate. Our rare breed lamb is naturally reared to produce a finely grained and well-flavoured meat and is sold as leg joints, diced lamb and minced lamb. All Tatton Farm Lamb is sold from the freezer and is available as leg joints, shoulder joints and chops.
